The Great Barrington Bagel Company is set to celebrate its 30th anniversary in February 2024, marking three decades of serving the community with quality bagels and deli offerings. Owner Bob Climo, who took over the business from its founders, Marvin and Judy Lieberman, has cultivated a reputation for both culinary excellence and community engagement.

Located in the scenic town of Great Barrington, Massachusetts, the bagel shop has become a local favorite. Climo emphasizes the importance of community values in his business model, participating actively in local events through sponsorships and fundraising initiatives.

Innovating with Tradition

Reflecting on the shop’s history, Climo shared, “Marvin and Judy came up with this great concept to bring bagels to Great Barrington. I was fortunate to work with them for about eight years before I bought the business.” Under his leadership, the company has evolved while staying true to its roots. Climo is currently planning a rebranding of their logo to highlight their diverse menu, which includes not only bagels but also deli favorites such as avocado toast and specialty fish options like sturgeon and nova lox, all sourced from the city.

Prior to his tenure at Great Barrington Bagel Company, Climo gained valuable experience in the food industry. He worked as a demo chef at Canyon Ranch and collaborated with nutritionists at the Cleveland Clinic, emphasizing healthy cooking. This background informs his philosophy that deli food can be both delicious and nutritious. “We make everything here in house to order,” he noted, underscoring his commitment to using local ingredients and minimizing processed foods.

The Bagel-Making Process

When it comes to crafting their renowned bagels, Climo follows traditional methods. “We mix the dough each morning, shape it, and let it proof overnight,” he explained. The next day, the bagels are boiled in a large kettle before being baked on bamboo and burlap-lined boards, a technique that ensures even cooking.

Many customers have their favorites, with the “tornado” (everything bagel), sesame, and poppy bagels topping the list. Climo is also experimenting with unique flavors, including an asiago cheese and jalapeño bagel, as well as a forthcoming French toast bagel. “Playing around with adding eggs and cinnamon to the dough,” he said, is part of his strategy to keep the menu exciting.

Climo has expanded the business beyond retail, establishing a robust wholesale operation that supplies local eateries such as the Berkshire Food Co-op and restaurants in nearby Litchfield County, Connecticut. He aims to further grow this segment, demonstrating his commitment to both quality and community support.

Community Engagement and Future Plans

As a former board member of BerkShares, a local currency initiative, Climo is a strong advocate for keeping economic benefits within the community. “I want to help other businesses thrive by keeping capital in this area,” he stated, highlighting the interconnectedness of local businesses for a healthy economic ecosystem.

In addition to his business ventures, Climo is keen on community involvement. He recently launched a new website to enhance customer engagement and streamline orders. “We’re always updating ourselves, and we’re more than just bagels,” he added.
