A delicious recipe for stuffed peppers is making waves as a perfect option for a family meal. This dish is not only hearty but also allows for a variety of adaptations based on personal preferences. Ingredients for Success
To prepare this dish, gather the following ingredients: **eight small peppers**, either bell or any preferred variety, **200 grams of rice**, one **onion**, one **carrot**, one **zucchini** (or a small piece of pumpkin), two **garlic cloves**, three tablespoons of **olive oil**, one teaspoon of dried herbs such as **oregano**, **basil**, or **thyme**, and salt and pepper to taste. For the sauce, you will need **500 milliliters of tomato juice** or pureed tomatoes, one teaspoon of **sugar**, and optionally, one teaspoon of **flour** to thicken the sauce. Fresh **parsley** finely chopped can be used for garnish.
Preparation Steps
Start by heating the olive oil in a pan. Finely chop the **onion** and both **garlic cloves**, then sauté them until they become translucent. Add the grated **carrot** and diced **zucchini**, and cook briefly until they soften. Next, stir in the **rice** along with the dried herbs. Mix thoroughly and add a small amount of water, allowing the rice to absorb moisture without cooking it completely.
Once the filling is ready, cut the tops off the peppers and remove the seeds. Carefully stuff each pepper with the prepared mixture, ensuring they are well filled but not overly packed. Arrange the stuffed peppers upright in a pot or a deep baking dish.
Next, prepare the sauce by heating the tomato juice with a little olive oil, sugar, and any additional seasonings desired. If you prefer a thicker sauce, you may add flour at this stage. Pour the sauce over the stuffed peppers.
Cover the pot with a lid and simmer on low heat for **30 to 40 minutes**, or alternatively, bake in the oven at **200 degrees Celsius** for approximately **45 minutes**. The peppers should become tender while the sauce thickens to perfection.
Serve your stuffed peppers with a fresh cabbage and carrot salad, boiled potatoes, or whole grain bread for a complete meal.
