Fréderic Fernandes, product manager for functional proteins at Beneo, highlights that one of the most promising areas in alternative dairy innovation is hybrid dairy. This approach combines traditional and plant-based ingredients to create products that harmonize familiarity with innovation. “Consumers get the taste, texture, and nutritional richness they expect from dairy, while also benefiting from the sustainability and health halo of plant-based ingredients,” he explains.
Fernandes notes that enriching dairy alternatives with plant-based protein and fiber enhances their nutritional profiles, bringing them closer to traditional dairy options. Manufacturers can achieve desirable taste and texture by utilizing the emulsifying and foaming properties of faba bean protein concentrate in products like dairy-free whipping cream or coffee creamer.
Consumer Needs Reshape Nutrition Products
According to Sophie Zillinger Molenaar, global marketing lead at FrieslandCampina Ingredients, ingredient innovation is redefining the future of nutrition. She emphasizes that consumers are increasingly seeking products that provide meaningful benefits in their servings. “In light of global health issues, satiety, gut health, and protein functionality are at the forefront of consumer needs,” Molenaar states.
The landscape of health-oriented products is evolving, particularly in the “protein+” market, where functional benefits are becoming just as important as protein content. Prebiotics and probiotics, recognized for their impact beyond digestion, are driving innovation towards solutions that are both functional and convenient, yet enjoyable.
Molenaar adds that today’s consumers expect not only health benefits but also satisfying sensory experiences. Features such as texture, mouthfeel, aroma, and visual appeal are being meticulously engineered to ensure that even compact or high-protein formats feel indulgent and emotionally rewarding.
Sustainability and responsible sourcing are increasingly viewed as integral to well-being by consumers. “Meeting these expectations requires a balance of science, functionality, and multisensory design,” Molenaar explains, “to create products that are worth every bite.” She concludes that companies capable of integrating these elements will shape the next generation of nutrition, where doing good and feeling good are interconnected.
The ongoing advancements in ingredient innovation underscore a significant shift in how the food and beverage industry approaches product development. As both manufacturers and consumers prioritize health, convenience, and sustainability, the future of alternative dairy and nutrition innovation looks increasingly promising.
