According to a recent article by Grace Elkus on Simply Recipes, incorporating gherkin brine is a game-changing technique for anyone looking to improve their potato salad. Elkus notes that the mild ingredients, such as starchy potatoes and creamy mayonnaise, readily absorb the lively flavours of pickle brine. She quotes renowned cook and author Julia Turshen, who highlights the benefits of infusing potatoes with this brine during the cooking process.
Unlocking Flavour with Gherkin Brine
Turshen’s approach, detailed in her book Small Victories, suggests that chefs should boil the potatoes in a mixture of three parts water and one part pickle brine. This method is particularly effective because the starches in the potatoes are at their most absorbent while cooking. By the time the potatoes are drained, they have already begun to soak up the brine’s sharp, sweet, and tangy flavours.
Elkus praises this technique as “brilliant,” emphasizing that simply seasoning the surface of the potatoes will not yield the same depth of flavour. She explains, “The most effective time to infuse them with flavour is when they’re boiling since that’s when their starches are most absorbent.” The infusion process begins by placing the potatoes in a saucepan filled with cold water, then adding enough gherkin brine to submerge them completely, followed by a sprinkle of salt before bringing it to a boil.

This innovative method does not have to be limited to summer picnics. Elkus encourages cooks to use gherkin brine whenever boiling potatoes, whether they are preparing mashed potatoes or crispy croquettes. “Don’t let this trick fade along with the potato salad season,” she advises. “It’s a versatile hack that can elevate any potato dish throughout the year.”
