Achieve Perfectly Crispy Roast Potatoes with One Simple Step
Many home cooks strive for the perfect roast potato, a beloved staple in numerous households, particularly during traditional Sunday meals. To achieve that coveted crispy exterior while maintaining a fluffy interior, experts recommend an additional step after boiling the potatoes. This often overlooked technique dramatically enhances the texture of roast potatoes.
The common practice of parboiling potatoes is essential as it softens them before roasting. However, according to culinary experts, there is a vital step that many people neglect. After boiling, allowing the potatoes to steam dry for at least 15 minutes can significantly improve their crispiness in the oven. This interval allows excess moisture to escape, which is crucial for achieving that delightful crunch on the outside.
Angela Nilson, a contributor to BBC Good Food, emphasizes the importance of this steam-drying phase. She advises cooks to let the potatoes sit for a quarter of an hour after removing them from the pot. This simple technique requires a bit of patience but is key to getting the best possible results.
Another culinary expert, Chef Esther Clark, also endorses this method, stating that steaming helps prevent sogginess in the finished product. Clark typically boils her potatoes for between 8 and 10 minutes before allowing them to steam dry. During this time, she recommends shaking the potatoes gently to roughen their surfaces, which aids in creating a crispy texture.
Once the steam-drying is complete, Clark places the potatoes on a tray, coats them in fat—often opting for goose fat—and adds seasonings. She then roasts them at a temperature of 200°C for about an hour. The result? Potatoes that emerge from the oven perfectly golden and crispy on the outside, while remaining soft and fluffy inside.
This straightforward adjustment to the cooking process can elevate roast potatoes from a simple side dish to a standout feature of any meal. By incorporating steam drying into your routine, you can ensure that your roast potatoes will be a hit at your next family gathering or dinner party.
